Black Bean Soup

 INGREDIENTS 

2 tablespoons extra virgin olive oil

1 large red onion, chopped

1 large carrot, peeled and diced

2 celery ribs, diced

1 jalapeno pepper, deseeded and diced

4 garlic cloves, minced

2 teaspoons ground cumin

1 teaspoon dried oregano

1 teaspoon ground coriander

1 teaspoon kosher salt

⅛ teaspoon cayenne pepper

3 (15-ounce) cans low-sodium black beans, drained and rinsed

3 cups low-sodium vegetable or chicken broth, or more??

1 to 2 tablespoons fresh lime juice

Optional toppings: fresh cilantro, red onion, avocado, or sour cream. Plus extra lime wedges

Heat the oil in a large pot over medium-high heat. Add the onion, carrot, celery, and jalapeno pepper, and cook for 4 to 5 minutes, or until softened.

Add the garlic, cumin, oregano, coriander, cayenne pepper, and salt, and stir together for another minute, until fragrant.

Add the black beans and chicken broth, stir, and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15 minutes.

Using an immersion blender, puree the soup a few times to have a mix of creamy and chunky textures. Alternatively, you can scoop out a cup or two of soup, blend it in a standard blender until smooth, and then stir it back into the pot. Then, stir in the lime juice.

Still not frostbite, it was 50 this morning-but I am NOT complaining.  Still came second in my category and still ran slightly faster than last year, so can't complain about anything

Frostbite Series 2023-24 #1 3K

 

Nowhere near Frostbite, it was 50 degrees this morning.  Beautiful day for a run in Forest Park.  There was a huge number of people running today.  My pace was faster than last year and I was 2nd out of 13 in my age range, so I'm happy with the result.

Go! St. Louis Spring 2023

 

I ran the 5K in Forest Park and did pretty well.  It was so windy and pretty cold (mostly because the wind was biting!!!!).  I came 4 out of 20 in my age group.  I had signed up for the 10K, but then found it was down town and there's no way I'm fighting traffic and parking to ever run down town again.

Snowball Series 2023 #4 5M Frontier Park

 

I hurt my back a couple of weeks ago and I hadn't run for over a week, so the Frontier Park run was harder than what I've been used to recently.  Still, my time was pretty good and I came 8th in my gender/age group.  I also came 8th out of 32 in the series, so I am very happy with that.
