Key lime pie recipe-so good, so bad for you!!!

Ingredients
1 1/2 cups graham cracker crumbs
1/2 cup granulated sugar
4 tablespoons (1/2 stick butter) melted
2 (14-ounce) cans sweetened condensed milk
1 cup key lime or regular lime juice
2 whole large eggs
1 cup sour cream
2 tablespoons powdered sugar
1 tablespoon lime zest

Directions
Preheat the oven to 375 degrees F.

In a bowl, mix the graham cracker crumbs, sugar, and butter with your hands. Press the mixture firmly into a 9-inch pie pan, and bake until brown, about 20 minutes. Remove from the oven and allow to cool to room temperature before filling.

Lower the oven temperature to 325 degrees F.

In a separate bowl, combine the condensed milk, lime juice, and eggs. Whisk until well blended and place the filling in the cooled pie shell. Bake in the oven for 15 minutes and allow to chill in the refrigerator for at least 2 hours.

Once chilled, combine the sour cream and powdered sugar and spread over the top of the pie using a spatula. Sprinkle the lime zest as a garnish on top of the sour cream and serve chilled.

Weekend away

We went to Little Rock for the weekend. My diet went to hell very quickly.  Little Rock has way too many good eating places for a paleo diet!!!  We had pretty much eaten all the food in the house, so I took the kids to Hot Pot Smoothie for dinner-I had a Groupon for it and they have some good paleo dishes.  I got my favourite-lemon mango curry with chicken.  So far, so good......
We went to U.S. Pizza for lunch on Sam's birthday.  Sam and I split a house salad and then I had pepperoni pizza.  This is the place where Sam gave me my engagement ring, so it has a special place in my heart.  The food is good too!!!!  Later, Sam went to meet a friend, so Ben and I went to Purple Cow and got Triple Chocolate Treat Malts-yes there are as many calories in them as the name implies!!!!  Maggie always prefers vanilla and they are purple-cool!!!!

I made pizza when we got home.  It was amazing.  I've had lots of practice
Oh no, after eating all that, I put on 3 lbs over the weekend.....

Recent food-related stuff

Sam made these steak kebabs with the cherry sauce last weekend, they turned out to be really good
We ate therm with cucumber, mango and avocado salad
Ben had made pita when he was in Culinary Camp and made some more when he was home.  They were really good and surprisingly easy to make
Ben has been coming to work with me quite a lot this Summer.  He's a big fan of Fresh Gatherings and gets lunch there, it is all locally grown food and I'm glad he likes it.  He had this huge sandwich one day

We went to First Watch for breakfast yesterday, last weekend of Summer vacation....

Really?????

I went to Dierbergs on my own last weekend.  I bought a bunch of food to pack for the kids' lunches this week (until I realized they are doing a camp where they make their own lunch!).  On my way to the checkout, I looked at the cart and thought "no one would know we were trying to eat paleo in our house"!!!!

Whole30, Day 25

 We are almost done with Whole30, just a few more days to go.  Even though I have done well this week, the kids have not had an optimal diet at all.  I got conned (I guess it doesn't take much) into taking them to McDonald's on Wednesday night after school.  Later, Maggie had a girl scout meeting and they had these cup cakes!!!!
 Tonight we went to Cici's pizza.  It is so bad that it's good!!!!  I didn't eat any of it, although it was hard to resist
I came home and made this omelet and a side of avocado, it was really good.  We are surrounded by food that is suboptimal and it's hard to resist it all the time.  I can see how easily you can slip back into the old routine, but I'm going to try to avoid the temptations.

Whole30, Day 25

I have to say that traveling and eating healthy are pretty much mutually exclusive.  After having spent the past week or so away from home and doing a pretty horrendous flight to Calgary, my Whole30 diet has completely fallen apart.  We spent the long weekend in Little Rock for Richard's birthday.  So, I was faced with some of my favourite restaurants, plus a bunch of food at the party.  My major transgression was the Triple Treat Chocolate Malt at The Purple Cow in Little Rock.  Haven't had one in years and I shared it with Sam, but even so....
I am now at a meeting in Banff.  We had a 24 hour delay in flights and so I spent a whole day dealing with airport food.  The conference has catered food which is really good but mostly things I can't eat.  It's given me a new perspective on what most people eat on a regular basis.  It's ironic that a conference that is focusing on diet, lipids, insulin resistance & Type II diabetes should serve four different jars of candy, plus mini kitkats at break time!!!!  I am resisting as much as I can, but it's a good job they ran out of the white chocolate mousse by the time I had eaten dinner though!!!

Sunday breakfast!!!!

I suspect that my "What not to eat" category could be swamped with entries about Greta!!!  It's not only what she eats, but how much of it.  We are going through OJ like it's going out of style and she definitely has the European sweet tooth.  Exactly like I was at that age.  We were rushing out of the house to go to the Festival of Nations on Sunday morning and she ate a Kaiser roll with Nutella in the middle and extra on top!!!!
She looks pretty happy about it, but it had no appeal for me!!!

Lunch at CGCH

I took Ben to the orthodontist and we ate lunch at Cardinal Glennon. I always say they have the best grilled cheese in the World. Ben has had it several times, but Maggie has only had it once before. Since it was one of her favourites, I thought she'd be pretty excited!!
I had grilled cheese and onion rings.
I have to say that it wasn't anything like as yummy as I remember it, andf the guilt was greater than the pleasure. Guess I am really getting paleo-hooked!!!

Catering for the teachers

The PTO always makes dinner for the teachers during parent-teacher conferences.  I was in charge of the dinner on Wednesday night.  It was quite a spread-salad, bread, chili, spaghetti and some absolutely yummy looking desserts.  Sam walked in and said "it's a good job we're not teachers because we wouldn't eat any of this", he's absolutely correct.  What a bunch of unappealing food-how did we get to this stage???!!!  However, when we cleared up, there were desserts left and we had to try them.  They were all hand made and NOT paleo, but definitely worth the flinch!!!!
