INGREDIENTS
- 12 large eggs
- 1 cup full-fat coconut milk
- ½ cup mushrooms, sliced
- ½ cup bell pepper, sliced
- 1 onion, sliced
- 2 tbsp fresh chives, minced
- Sea salt and freshly ground black pepper to taste
PREPARATION
- Preheat your oven to 350 F.
- Whisk the eggs in a bowl with the coconut milk, and season to taste with sea salt and black pepper.
- Divide the eggs between 2 round casserole or pie dishes and distribute the remaining ingredients on top of each dish.
- Place in the oven and cook 20 to 25 minutes.
