Oven omelet

INGREDIENTS

  • 12 large eggs
  • 1 cup full-fat coconut milk
  • ½ cup mushrooms, sliced
  • ½ cup bell pepper, sliced
  • 1 onion, sliced
  • 2 tbsp fresh chives, minced
  • Sea salt and freshly ground black pepper to taste

  PREPARATION

  • Preheat your oven to 350 F.
  • Whisk the eggs in a bowl with the coconut milk, and season to taste with sea salt and black pepper.
  • Divide the eggs between 2 round casserole or pie dishes and distribute the remaining ingredients on top of each dish.
  • Place in the oven and cook 20 to 25 minutes.
