Butternut squash curry with chicken

Ingredients
1 onion
1 butternut squash
garlic
ginger
2 tsp Trader Joe's curry powder
4 chicken breasts
1 can coconut milk
2 oz almond slivers

I cooked the onion in some coconut oil, then added the chopped butternut squash, ginger, garlic and spices. I added the coconut milk and cooked until the butternut squash was tender. I smashed the squash with a potato masher and then added the chicken and cooked until the chicken was tender.

I made with some cauliflower rice-put the cauliflower through a food processor, fry in some coconut oil and add a little coconut aminos.
I put some basil on top and it was really yummy!!!!!
